I am now officially open for business! Got my first few orders from some friends, mostly for Thanksgiving. I like that I'm busy, but I don't like that I'm stressed and tired. Eventually I'll settle into a good routine, and I'll be churning out pastries without a care in the world, but right now I have to deal with inefficiencies in the 'system':
1. MY OVEN. It is a traditional oven that bakes one tray at a time. Therefore, a batch of macarons can take as long as 2-3 hours to complete.
2. ARMY OF ONE. Since I can't afford to hire people yet, I have to take care of shopping, baking, dishwashing, accounting. The biggest deal is the dishwashing -- it makes me so tired.
3. FRIDGE SPACE. We've started to order pizza because I told Garry that there will be no more cooking in the house! Heh. I need the space.
Overall, I'm happy that I finally decided to do it. At least I can say I'm a real patissier now. :)
